Labor Day marks the end of the summer and for me it almost always feels bitter sweet. I think, “Where did the summer go?” and at the same time “I can’t wait for the leaves to change ”. With endless trips to the beach, outdoor grilling and fun with family and friends you may have thought the summer festivities would never end! Let’s take advantage of these last few weeks of great weather with a festive Labor Day barbecue.

What’s on the menu?

Easy to prepare proteins like beef and fish as well as veggies work great on the grill – they’re easy, fast and delicious. But don’t think that fish is your only healthy option; lean protein, such as lean beef and poultry, provide essential nutrients to fuel activity and also help people consume more essential nutrients in fewer calories, while balancing their food intake with physical activity.

Spicy Shrimp Bites

Spicy Shrimp Bites

Prep: 10 minutes

Makes: 16 to 20 bites

Ingredients:

  • 1 pound large shrimp, 21/25 ct
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • Kosher Salt & Pepper
  • 1 cup guacamole (store bought or self prepared)
  • Handful chopped cilantro
  • Olive oil for cooking, about 2 tablespoons
  • 20 plain potato chips such as Lay’s® or whole grain Tostito cups

 Directions:

  1. In a large bowl, toss the shrimp with the spices until well mixed (paprika through garlic powder).
  2. Heat the oil in a large skillet over medium heat. Add the shrimp to the pan in a single layer. Cook 2 minutes on each side until pink and cooked through.
  3. Remove from heat and sprinkle with salt and pepper to taste.
  4. To assemble your bites, place your chips on a large platter and top each with a spoonful of guacamole and top with shrimp.
  5. Sprinkle with cilantro and serve immediately.

Tip: Do you enjoy more heat? Drizzle sriracha over each shrimp bite!
