The Easiest Tender Beef Eye Round w/ Carrots & Potatoes

Makes: 6 Servings
Ingredients:
• 3 pounds beef eye round roast
• Kosher Salt & Pepper
• Garlic powder
• 4 Large carrots, peeled & chopped
• 1.5 pounds baby potatoes
• 2 tablespoons olive oil
Directions:
1. Preheat oven to 500 degrees F.
2. Season roast liberally with salt, pepper and garlic powder. Drizzle with 1 tablespoon olive oil and press seasoning into beef.
3. Place beef in a roasting pan and surround the beef with the carrots and potatoes, drizzle vegetables with remaining olive oil and salt and pepper.
4. Place in oven and reduce heat to 475 degrees F. Roast for 21 minutes. Then turn off the heat on the oven and let the roast sit in the oven for 2.5 hours.
5. DO NOT OPEN THE OVEN DOOR.
6. After 2.5 hours, remove roast from the oven and check the internal temperature has reached at least 145 degrees F. Slice thinly and serve with carrots and potatoes.Show More
